You're confusing unhomogenised milk with unpasteurised milk, Erin. Under Australian law, all milk must be pasteurised - but it does not have to be homogenised.

Pasteurisation
All fresh milk in Australia must be pasteurised, a heat treatment that kills bacteria. Not all pasteurisation is the same, however, and various techniques meet health requirements.

Most milk is pasteurised by High Temperature-Short Time treatment. It is heated to a minimum of 72C for at least 15 seconds, using heat exchange plates as it passes through pipes.

According to Harold McGee's On Food and Cooking, HTST kills many flavours and introduces some new tastes including an off, eggy flavour. This taint, once derided, is now considered the norm and is expected in milk. HTST also accentuates such characters as nut aromas.

Homogenisation
Just about all milk in Australia is homogenised. Forced at high pressure through fine pipes, the cream becomes evenly dispersed. Homogenised milk is whiter and has a thinner mouthfeel than unhomogenised milk.

In unhomogenised milk, cream will rise to the top when it stands for any length of time. Such milk is also widely regarded as more flavoursome (in the homogenised variety, aromatic fatty molecules are surrounded by virtually flavourless proteins) but can go sour more rapidly. The rich cream is a fine place for bacteria to flourish, though it still keeps well for more than a week.

Purists swear by the richer, fuller flavour of unhomogenised milk; many people prefer homogenised milk because they've become accustomed to its milder taste.

I'm a huge fan of Jasper Coffee, who also deal their caffeine at Prahran Market, and at a much more reasonable price than Market Lane. With such a lovely setting though Market Lane is sure to draw a following. I look forward to having a taste test!
